When my parents became vegan in the early 90s, my mom was nearly always on the hunt for new recipes, as there just weren’t a whole lot of vegan cookbooks back then. Our few vegan cookbooks were like household treasures, and one of the fairest gems was Whats Cooking in the Benton Sisters’ Kitchen?, written by three sisters who shared vegan recipes that were also free of refined sugars and oils. While it appears that their original books are out of print, they still sell DVDs of their cooking video demonstrations on their website. Tomorrow, I will be posting a recipe that was inspired by the Benton Sisters’ tofu chik’n patties recipe. I have made many changes to the original recipe that I believe produce a tastier patty. I can’t wait to share it with you!
