Hi and welcome to VeganYumminess!
I’m Lindsay, and my husband Jonathan is the cute guy standing beside me in the picture above.
About 6 months ago, I passed my national certification exam to become a family nurse practitioner.
About 4 months ago, we brought home a beautiful newborn baby girl from the hospital.
About 2 months ago, we moved away from the comforts of home, as we knew it, for Jonathan to attend graduate (anesthesia) school in another town.
About 1 month ago, I realized that our baby girl needed me to be home with her a little longer before I could start working as a nurse or nurse practitioner again.
About 1 week ago, I decided not to waste my time at home, watching useless online videos and woefully wishing I could get out and make more friends, but chose rather to utilize my time to promote something that I am very passionate about: vegan food.
About 6 days ago, VeganYumminess was born.
Unsurprisingly, as a stay-at-home-mom with a husband in graduate school, I am painfully aware of how seemingly expensive the vegan lifestyle can be. However, with God’s help and a little bit of work, I am finding that vegan cooking can be not only healthier, but also more cost effective in the long run, than the non-vegan alternative. I can’t wait to share with you everything I’ve learned!
VeganYumminess is still in its babyhood, but is everyday taking giant leaps towards leaving its fledgling status behind and spreading its wings of success. I look forward to serving you up some delicious vegan recipes, pictures, menus, and discussions. Thanks for stopping by!
