A few weeks ago, I tried making alfredo sauce from coconut milk and a few other ingredients. Check out that recipe here. It was amazing. So amazing, that I had to make it again. This time, however, I threw in a few twists in the form of linguine, tomato, onion, bell pepper, and garlic. It was DELISH. However, I do think that the next time I make it, I will decrease the amount of cornstarch by a tablespoon, or change the cornstarch to flour.
When the pasta starts to cool, the sauce can get a bit more goopy than intended. If this happens to you, heat it up again nice and hot, and eat it before it cools off too much. Or, if you want to play around, try using less cornstarch or flour and let me know what happens.

Vegan Alfredo Pasta with Vegetables
Equipment
- high-speed blender (like Vitamix or Blentec)
- Large pot
Ingredients
- 1 lb linguine cooked according to package directions and drained
- 1 can coconut milk full fat
- 1/2 cup raw cashews
- 1/2 cup water
- 2 tablespoons nutritional yeast flakes
- 1 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- 1 tomato chopped
- 1/2 red bell pepper chopped
- 1/2 medium onion chopped
- 1 clove garlic minced
- 5 fresh basil leaves torn
Instructions
- Cook linguine according to package instructions in salted boiling water, and drain.
- While your linguine is cooking, blend coconut milk, cashews, water, yeast flakes, salt, lemon juice, cornstarch in a high-speed blender until completely smooth.
- Heat olive oil for 10-20 seconds in a very large skillet on medium heat. Add tomato, bell pepper, and onion. Sauté until onions are nearly clear, then add your cooked linguine and alfredo sauce.
- Cook for just another few minutesuntil alfredo starts to thicken, then serve hot with torn basil leaves on top for garnish.
