Preheat oven to 450 degrees. Peel and cut sweet potato in french fry sized pieces.
Combine cut sweet potato with olive oil in a bowl.
In a separate bowl, combine remaining seasonings with cornstarch.
Pour seasonings over oiled sweet potato and mix well. (Your hands work best for this! :))
Spread sweet potato fries over 2 baking sheets, making sure that fries are not touching each other.
Bake at 450 degrees F for 7 minutes. Turn fries with a large spatula, then turn oven down to 375 degrees F for about 5 minutes. Check fries, if they still aren't quite crispy, turn oven back up to 450 degrees for 1-3 minutes.
Remove fries from oven, and allow them to cool for just a few minutes before serving.
