Easy Vegan Sloppy Joes

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium red onion (finely chopped)
  • 1 green bell pepper (finely chopped)
  • 1 clove garlic (minced)
  • 1/2 cup black olives (very finely chopped)
  • 15 ounces fire-roasted diced tomatoes (1 can, with juice)
  • 15 ounces cooked black beans (1 can, drained)
  • 15 ounces kidney beans (1 can, drained)
  • 2.25 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon ground cumin
  • 1/4 teaspoon ground cayenne pepper (optional)
  • 1/2 cup cilantro (finely chopped)
  • 3/4 teaspoon salt (or more to taste)
  • 6 burger buns (vegan)

Instructions

  • Heat up olive oil in a large saucepan on medium heat for about 20 seconds. 
  • Add chopped onion, chopped green bell pepper, and minced garlic to your large saucepan, and sauté until onion is tender and becoming clear--about 5 minutes.
  • Add remaining ingredients--finely chopped black olives, fire-roasted diced tomatoes, black beans, kidney beans, sugar, lemon juice, and seasonings.
  • Allow mixture to simmer until most of the juices are cooked off. When the texture of your sloppy joes resembles that of a very thick chili, you know it's done.
  • Toast your vegan burger buns, if desired, and serve sloppy joes with your favorite greens.
