Vegan Peanut Butter Cookies

Ingredients
- 1 cup peanut butter (all natural)
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup almond milk ((+ 1 tablespoon, depending on your PB thickness))
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1/4 cup quick oats
- 1/2 cup whole wheat pastry flour
Directions
Step 1 | |
Preheat oven to 350 degrees F. | |

Mix first five ingredients together in mixing bowl, then add the last 2 ingredients. | |

Roll dough into tablespoon sized balls, and place on prepared cookie sheat. Mash perpendicularly with a fork, and sprinkle with sugar crystals. | |

Bake at 350 degrees F for approximately 9-12 minutes. Allow cookies to cool completely before removing them from pan. To retain chewiness and moisture of cookies, place a slice of bread with the cookies in the airtight container. | |
