Three Bean Soup with Lime and Cilantro

Ingredients
- 1 medium onion (chopped)
- 1/2 green bell pepper (chopped)
- 2 cans black beans ((15 ounce cans))
- 2 cans pinto beans ((15 ounce cans))
- 1 can kidney beans ((15 ounce can))
- 1 can yellow corn kernels ((15 ounce can))
- 2 cans diced tomatoes ((15 ounce cans))
- 2 1/2 teaspoons cumin
- 1/2 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper ((or to taste))
- 1/2 cup fresh cilantro (stemmed and chopped)
- 1 1/2 teaspoon salt ((or to taste))
- 2 limes (juiced)
Directions
Step 1 | |
Saute onion and bell pepper in about 1/4 cup of water for about five minutes. | |
Step 2 | |
Place all ingredients except for cilantro in large pot. Bring to boil. Allow to simmer for about 15 minutes. Add cilantro just prior to serving. | |

Serve with your favorite tortilla chips and/or vegan cheese! |
