Pumpkin Cookies (Vegan)
Ingredients
- 1/2 cup Earth Balance margarine
- 1/2 cup canola oil
- 1 1/2 cup sugar
- 1/2 cup brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 2 1/2 cups white whole wheat flour
- 2 heaped teaspoons aluminum free baking powder ((Or you can use 1 teaspoon baking soda with 1 teaspoon baking powder))
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1 cup pureed pumpkin
Directions
Step 1 | |
Preheat oven to 350 degrees F. | |

In mixing bowl, whip together all ingredients except flour and baking powder. | |

Mix together flour and baking powder in separate bowl. | |
Step 4 | |
Combine wet and dry ingredients. | |
Step 5 | |
Drop heaping tablespoon size amount of dough about 1-2 in. apart on prepared baking sheets. | |
Step 6 | |
Bake at 350 degrees F for 10-12 minutes, or until slightly browned on edges. | |
Step 7 | |
Drizzle a glaze of almond milk and powdered sugar over cookies, if desired. | |
