Ingredients

  • 2 sheets vegan puff pastry (I use Pepperidge Farms, but Aussie Bakery also makes a vegan variety)
  • 1 teaspoon extra virgin olive oil
  • 1/2 cup onion (finely chopped)
  • 1/2 cup mushroom (chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 carton Tofutti Better Than Cream Cheese
  • 3 1/2 tablespoons pizza sauce
  • 2/3 cups olives (halved lengthwise and sliced)
  • 2 scallions (finely chopped, optional)
  • your favorite pizza toppings (optional)

Directions

Step 1
Begin by taking your puff pastry sheets out of the freezer and placing them in the refrigerator for several hours.
Step 2
Heat your olive oil in a pan on the stove on medium to medium/high heat, and saute your mushrooms and onions until mushrooms are soft and all the excess water has evaporated. Add Tofutti Better than Cream Cheese to your mushroom mixture and remove from heat only after cream cheese has begun to soften.
Step 3
Preheat your oven to 350 degrees Fahrenheit.
Step 4
Unwrap your first sheet of puff pastry onto a floured surface. Don't roll it out, just press out any wrinkles with your fingers. Spread about 1/2 of your mushroom/cream cheese mixture evenly on to your puff pastry. On top of that, spread about 3 1/2 tablespoons of pizza sauce. Sprinkle half of your chopped olives and scallions (or other favorite toppings), and roll up your puff pastry as tightly as possible without losing any of your toppings out the sides. This part can get messy. That's okay. :)
Step 5
Once you have created a nice log with your puff pastry, use a sharp serrated knife to slice 3/4 inch thick rolls off of your log. Place rolls cut side up on to a prepared baking sheet. (I use a non-stick pan liner, and it works great.) These pinwheels do expand some while being baked, so you won't want to try to fit more than 12 on a standard-sized baking sheet.
Step 6
At this point, you can either set your first baking sheet aside and prepare your second sheet of puff pastry (by repeating steps 4 and 5), then baking both baking sheets together, or you can go ahead and start baking your first sheet of pinwheels separately. I find that the pinwheels bake more evenly in my oven when I bake one sheet at a time.
Step 7
Whichever option you choose, you'll want to bake these puppies at 350 degrees F for about 22 minutes, or until the puff pastry is just barely starting to turn golden brown on the edges.
Step 8
To store, you can place the pinwheels in an airtight container and leave at room temperature for up to 48 hours, or place in the refrigerator for up to a week. (They will probably be eaten long before then, though.)

If you are making these for guests, they are best if baked just prior to serving. I haven't tried this, but I imagine you could prepare your pinwheels and place them on baking sheets the night before, and refrigerate until the day of your party. If you try this out, let me know how it works for you.
