Ingredients
- 1lb linguine (cooked according to package directions and drained)
- 1 can coconut milk (full fat)
- 1/2 cup raw cashews
- 2 tablespoons nutritional yeast flakes
- 1 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 1/2 cup water
- 1 tablespoon olive oil
- 1 fresh tomato (chopped)
- 1/2 red bell peper (chopped)
- 1/2 medium onion (chopped)
- 1 clove fresh garlic (minced)
- 5 fresh basil leaves (torn)
- 2 tablespoons cornstarch

Cook linguine according to package instructions in boiling water. | |

While your linguine is cooking, blend next 7 ingredients in a strong blender until completely smooth. | |

Place olive oil and vegetables in a sauce pan on medium. Saute until onions are nearly clear, then add your cooked linguine and alfredo. | |

Cook for just another few minutesuntil alfredo starts to thicken, then serve hot. |
