Vegan Green Monster Smoothies

So, technically, the first day of fall was September 22.

Maybe it’s because I am having late summer withdrawals. Or maybe it’s because I love taking pictures of colorful foods…

Or maybe it’s because I have a big bag of fresh spinach in the fridge that needs to be used up (most likely reason)…

For whatever reason, I had a hankering for some green smoothie this afternoon, and little M was kind enough to sit happily in her exersaucer while I ran the blender.

You see all those red strawberries in there? Yeah. They look pretty in the blender. One thing I learned from this expeiment is that red strawberries + green spinach= a pretty nasty looking brown substance. So, save yourself the headache and leave out the strawberries.

If you do happen to make the same mistake that I did, don’t worry. All is not lost. Add more pineapple or banana and ALOT more spinach until the green overtakes the brown. I guess it makes for a more nutrient-rich smoothie as well.

These tasted amazing.

Vegan Green Monster Smoothies

Sweet and tangy frozen green monster smoothies

Ingredients

  • 2 fresh bananas peeled
  • 2 cups frozen mixed fruit (usually has peaches, pineapple, mangoes, and strawberries)
  • 1 can pineapple chunks (20 oz with juice)
  • 1/2 cup orange juice
  • 3-4 cups fresh spinach

Instructions

  • Place all ingredients in a blender.
  • Blend on high until completely smooth.
  • Drink up!
