One of my favorite summer activities has very little to do with beaches, pools, and tanning lotion. Yep. Even though I love water sports and being outside in the summer, my absolute favorite summer pastime is smoothie-making. There is just something super exciting about pouring a bunch of fresh and frozen fruits (and sometime veggies) into my Vitamix and watching it turn into a cool and refreshing smoothie.
Some people like to add loads of liquid to their smoothies until it has water-like fluidity. Not me.
To me, the best smoothies have the consistency of soft-serve ice cream. A real A+ smoothie is thick and cold and eaten with a spoon. To really take this smoothie to the next level of thickness, try using a frozen banana instead of a fresh one. You just might have to add a little more almond milk to keep from killing your blender.
What I love about this recipe is that it is really simple, easy, has no added sugar or fat, and is chock full of blueberries. (FYI: Blueberries are good for your memory and are full of antioxidants which help prevent cancer. Someday I’ll come up with a reference for those facts. But, for now, just know that I’m telling you the truth.
So, go ahead. Make yourself a giant smoothie and head on outside to enjoy the sunshine. You won’t regret it!
Vegan Banana Blueberry Smoothie
Ingredients
- 1 large banana I used fresh, but you can use frozen for a thicker smoothie, you just might need a little extra almond milk.
- 1 cup frozen blueberries
- 1 cup frozen mangoes
- 1 1/4 cup almond milk (sweetened or unsweetened)
Instructions
- Add all ingredients to high-speed blender.
- Blend on high for 1-2 minutes until smooth.
- Enjoy it cold, with a spoon!
