I’ve had so much fun trying out some new vegan recipes this week. Some of you may find that some of these recipes work better as dinner options for you, rather than lunch, and that’s okay. I tend to eat a hefty lunch and a lighter dinner, just because I’ve found that I sleep better if I don’t eat my biggest meal at dinner time. Here’s what’s been tickling my taste buds lately.
Spring is here (sorta), but we’ve been having some pretty chilly weather here in the hills of Tennessee. This week, I jumped on the opportunity to make a few more soups before the heat really sets in. I subbed the bok choy in this recipe with regular ol’ cabbage, and added 7 ounces of tofu, fried in a tiny bit of oil, soy sauce, and salt. Yum.
3. Wednesday: Lentil Lettuce Tacos from Vegan Yumminess
This recipe has to be one of my favorite lunches, even though I don’t get around to making it nearly as often as I would like. You can’t go wrong with crunchy Romaine and Tex-mex seasoned lentils with corn and seitan. Drizzle on some vegan Subway-style chipotle sauce, and you’re good to go.
4. Thursday: Sweet Sesame Roasted Brussels Sprouts and Tofu on Rice from Vegan Yumminess
So not everyone likes Brussels sprouts. I get it. I really do. Sometimes I don’t like them either, but I really was surprised by how wonderful they taste when they’ve been roasted with Asian flavors. So, step out of the box, and try something different. I think you’ll like it.
I know, I know. Omelets aren’t exactly a vegan lunch-ish food. But, they’re so wonderful, that I just had to take a picture and share the recipe link with you. Hey, maybe there are some weirdos out there like me that would possibly eat a vegan omelet for lunch. If you haven’t checked out the Vegan Zombie on Youtube, you really should. You’ll find entertaining vegan recipe videos that will most certainly keep you craving more.
